Stevia Sweetened Kettle Corn

Kettle corn is a delicious snack that meets salty and sweet perfectly. If you are following a low carb lifestyle, it is typically way too high in carbs. By using stevia, we are able to make a sugar free, carb conscious version in this Stevia Sweetened Kettle Corn Recipe.

What is Stevia?

Stevia is a natural, zero-calorie sweetener derived from the leaves of the Stevia rebaudiana plant, which is native to South America. It has been used for centuries by indigenous peoples in Paraguay and Brazil to sweeten foods and beverages.

The sweet taste of stevia comes from compounds called steviol glycosides, particularly one called stevioside. These compounds are much sweeter than sugar, with stevia extract being up to 200-300 times sweeter than sucrose (table sugar) on a weight basis.

Stevia is often used as a sugar substitute in foods and beverages, particularly in products marketed to individuals seeking to reduce their sugar intake or manage their blood sugar levels, such as those with diabetes or those following low-carb or ketogenic diets.

One of the key benefits of stevia is that it does not raise blood sugar levels or contribute to calories, making it a suitable option for people looking to reduce their sugar consumption without sacrificing sweetness.

I have been using stevia for years to sweeten so many recipes in my kitchen. I remember using the raw leaf to make some sweetened tea once! It is something I believe all low carb kitchens should have handy. Now, let’s get in to the delicious stevia sweetened recipe!

Trim Healthy Mama

Adam and I have started implementing the Trim Healthy Mama way of eating. You can learn more about the diet here at Gwen’s nest.

It is basically a low glycemic diet that separates the two fuel sources carbs and fats. By keeping these separated, you can enjoy all the food groups and still lose weight.

My sister and her husband are also following this plan and effortlessly seeing clothes fit looser and enjoying the new foods.

S meals are satisfying and using fat as the main source of fuel. E are energizing and using carbs (healthy, no sugar carbs).

This could be an E snack.  For E, you could go up to 3 cups of popcorn – this would still only have 1 teaspoon of oil total and 18 carbs from the popcorn.

A recipe you can share with friends

Today, I’m going to share my recipe for Sugar Free Stevia Sweetened Kettle corn. I’m taking one pan of agave sweetened and one pan of stevia sweetened to my small group this week for our snack. We will see how they tastes. (Agave is not on the THM plan, but it is for all the kiddos that come to our small group)

I’m using coconut oil for it’s added benefits for increasing metabolizing and helping with weight loss. You could also use butter

Stevia Sweetened Kettle Corn Recipe (Sugar Free)

Ingredients:

1/2 cup of unpopped corn kernels

2 tablespoons of coconut oil

1 teaspoon of salt (I use pink Himalayan)

1 teaspoon of cinnamon

I used  sweet drops liquid stevia and used about 1 1/2 full droppers – next time I may try xylitol or a powdered stevia.


Directions:

Air pop corn kernels into a bowl. Preheat oven to 350 degrees.

In a sauce pan melt your oil, salt, and sweetener. degrees.

Once melted, pour over your popcorn. You can mix your sweetened oil in with the popcorn with a spoon or your hands. After mixing, pour all the popcorn into a baking pan.

Place pan into preheated oven and bake for 8-10 minutes.

  1. Oh, yum! I bet you’d enjoy xylitol or erythritol with just a bit of stevia to boos the sweetness. I want to play around with this recipe too! Sounds yummy.

  2. I have made kettle corn using xylitol and it didn’t really “dry” so to speak. It just stayed kinda damp like and sticky. It still tasted good tho. I want to get some erythritol and try that instead.

  3. Thanks for sharing! We tried it tonight and it was yummy! I used too much Stevia so next time I’ll pare it back a little. But definitely a great snack to kill the sweet craving 🙂

    • Oh yay! It is a good snack. There is something about popcorn that just makes me feel like a kid. You are right about the stevia, it is hard to find a “sweet spot” I need to make these again with stevia extract powder soon instead of the liquid. I think I would like that.   6. I foolishly didn’t check for unpopped kernals before placing in an electric oven. Kernels popped, flew into the elements and caught on fire. I turned off the oven as soon as I heard the popping. I didn’t burn down the house, but I learned a lesson. The popcorn was still good.
