Trim and Healthy Asian Lettuce Wraps

I fell in love with lettuce wraps not to long ago… and I am hooked. We had them first at Cheesecake Factory. They were chicken and mushroom lettuce wraps and they were amazing! I was hooked from the first bite. I knew I would need to figure out a way to make these at home, because I couldn’t afford to go to Cheesecake Factory as often as I would want to eat these Asian lettuce wraps.

Since opening my world to lettuce wraps, I have a love for all things wrapped in lettuce. I know that if you haven’t tried them yet, you may not think they could be that wonderful… but just wait til you try these!!! I am going to be working on Mexican Lettuce Wraps, Peanut Sauce Lettuce Wraps, and Cheeseburger lettuce wraps.

Most lettuce wraps use a sauce that has been thickened by flour or another off plan thickener. This recipe is unique because it uses Glucomannan Powder (affiliate link). This amazingly versatile low carb thickener is made from the Konjac root. It is tasteless and calorie free. For an even added bonus, it can help keep you full longer and help you lose weight! If you are a Trim Healthy Mama: These are an S – or Satisfying meal.

Because this is an S meal, you could make it with any type of ground meat you would like: Pork or Beef would be great in this recipe.

Turkey and Mushroom Asian Lettuce Wraps

A Trim and Healthy Satisfying Asian Lettuce Wrap Recipe.

Ingredients
  

  • 1 tablespoon of coconut oil
  • 1 pound of Ground turkey
  • 1 onion
  • 1/3 cup of Tamari or soy sauce
  • 1/2 cup of chicken stock
  • 2 tablespoons of rice vinegar
  • 1/2 teaspoon of glucomannan
  • 1/2 teaspoon of ginger
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon of red pepper flakes
  • 1/4 teaspoon of black pepper
  • 1/4-1/2 teaspoon of salt the soy sauce is pretty salty already
  • 1/4-1/2 teaspoon of liquid stevia drops depending on how sweet of a teryaki sauce you like you could also try Truvia, Nunaturals stevia or other sweetener
  • 1 large box of mushrooms - chopped finely
  • 1 cup of shredded carrots
  • 1 package of Hearts of Romaine lettuce

Instructions
 

  • Heat sauce pan on medium high heat.
  • Add coconut oil. Once heated, add chopped onion.
  • Once onion is cooked, add ground turkey, salt, pepper flakes, black pepper, ginger and garlic powder.
  • In a separate bowl, mix the tamari or soy sauce, broth and rice vinegar.
  • Add in the liquid stevia (or you can try a few shakes of nunaturals or Truvia powder)
  • Slowly stir in glucomannan making sure to mix in completely without forming clumps.
  • Once meat is cooked, add liquid mixture, carrots and mushrooms.
  • Let cook until carrots are tender (about 10 minutes)
  • Serve wrapped in lettuce leaves.

    • I’m glad you asked! When I posted it in the groups, the admins told me to change it to S – because they thought some people may choose higher fat meats. I think it would be close to a fuel pull though : )

      • That makes sense. I think the admins led you wrong, though. As is, you’re right, it’s closer to a fuel pull. It’s illogical to label a recipe an E or an S depending on how people might change the ingredients. I guess you could could explain on your recipe that if you change the meat, you might change what kind of meal it is. Anyway, looking forward to trying this. Thanks so much!

    • Hey there! If you can’t use or don’t want to use gluccomannan, I would suggest Arrow Root as I’ve used it before for a thickener. Let me know how it goes!
