This Sugar Free Hot Chocolate Mousse is made with almond milk and glucomannan as its thickening agent. Together with flavors of chocolate and vanilla blend into the perfect dessert or snack.

I topped mine with cacao nibs because I’m kind of obsessed with them right now. If you like dark chocolate, you need to check them out. They can be eaten raw, but we are enjoying them sprinkled on desserts and oatmeal for a special touch.

What is Glucomannan 

Glucomannan is a type of dietary fiber that comes from the root of the konjac plant. It is used in food products like pasta and flour. It’s also the main ingredient in shirataki noodles. Glucomannan has many health benefits. It can help to control blood sugar levels, reduce cholesterol, and promote weight loss by making you feel fuller for longer. It’s often used as a supplement for weight loss and cholesterol management. It’s important to take it with plenty of water to prevent choking or blockage in the throat or intestines.

My husband and daughter both were impressed with how simple it was to make and how delicious the final product is. Sometimes you want to taste of hot chocolate without the heat. This will be the perfect dessert for just that occasion.

For Trim Healthy Mama’s: This recipe makes 2 large servings and would be a Fuel Pull snack or dessert because it is low in fat and carbs. Enjoy!

Hot Chocolate Mousse

This Sugar Free Hot Chocolate Mousse is the perfect chocolate treat that is guilt free.

Ingredients
  

  • 2 cups of almond milk
  • 2 tsp of glucomannan
  • 2 tablespoons of xylitol
  • 1/8 teaspoon of stevia extract powder
  • 1 tsp of vanilla extract
  • pinch of salt
  • 2 tablespoons of unsweetened cocoa powder
  • 1/3 cup of cottage cheese or Greek yogurt Dairy Free - Omit the cottage cheese or yogurt and try with coconut milk yogurt

Instructions
 

  • In your mixer, add almond milk and vanilla.
  • With mixer on low, using whisk attachment, slowly add in your glucomannan.
  • Once mixed thoroughly, add in your xylitol, stevia, salt, and cocoa powder.
  • Add in cottage cheese or yogurt.
  • Mix on high for 3-5 minutes.
  • Place entire mixing bowl with contents in fridge to cool for an hour.
  • After an hour, place mixing bowl back on mixer and mix for another 3-5 minutes.
  • Top with cacao nibs (optional)

  7. just a heads up – omitting the cottage cheese won’t make it dairy free since Greek yogurt is a dairy product. Using coconut milk yogurt might be an alternative to make it genuinely dairy free.

  8. So I just made this tonight for my Fiance and I. It turned out ok any suggestion on how to get the lumps out? I tried adding the gluccie slowly (which I think is what the lumps are), but I maybe didn’t add it slowly enough? Also it seems some what slimmy verses fluffy…any suggestions? TIA!

    • Oh no! Yeah, I would guess the lumps are the glucci. Are you using you mixer with a whisk attachment? That was what really changed the consistency for me. When I was using any other method, it wouldn’t allow enough air to mix in and wouldn’t have the same consistency. With the clumps… I’m trying to think why it would clump. I add the glucci while the whisk is still turning probably at a medium speed. I hope this helps!

    YUMM. . .just made this in blender on low — using carob — too late in the evening for chocolate. Did not refrigerate — ate immediately. YUMM.

  11. Only sugar free if you use unsweetened almond milk. Regular almond milk is high in sugar, which is why I stopped buying it.
