Graham Crackers: Grain free – Gluten free – Sugar free

One day, I was busy making snacks for my family and really wanted a healthy graham cracker. I couldn’t find a recipe that fit all my needs (and there were a lot of them!). I ended up creating this recipe using ingredients I had on hand to make a grain free, gluten free and sugar free graham cracker. I was really pleased with the way this cracker recipe turned out! Because this was a sweeter type cracker, I served it with a cream cheese mint chocolate chip dip.

We try to eat gluten free in our house along with grain free and sugar free. It is pretty hard to find a cracker recipe that fits all of those requirements. I love that this recipe is not only easy to make, but isn’t too messy either. This is a great recipe to have the kids join you in the kitchen to help.

This low carb graham cracker recipe is full of high quality ingredients and good for your nutrition you can feel good giving to your kids. No gluten here! These graham crackers are gluten, grain and sugar free too.

This isn’t just like a Graham cracker, but it is sweet and cinnamon flavored – just what I was looking for in a cracker!

What flours should you have in your pantry for low carb baking?

I try to keep my pantry stocked with some of the most common low carb and paleo flours so I can make different recipes when I need. I shared my Keto Grocery List which has the most common foods you should stock if you are following a low carb or keto lifestyle.

Some of my favorite flours to have on hand are almond flour, coconut flour, and ground flaxseeds. Now remember, you can’t just sub different flours in various recipes. Especially when you are making low carb or grain free recipes.

So my recommendation is to always follow the recipe with the flours listed if you want the best outcome. Obviously you are always welcome to experiment if you want to try something new though!

Are these sugar free graham crackers low carb?

These graham crackers should be low carb with the ingredients it uses. The “flour” in this recipe consist of ground flaxseeds and almond flour which are both low carb! This recipe also uses a sugar free sweetener to make it sweet without the carbs.

What are the ingredients in these sugar free graham crackers?

  • ¾ cup of ground flax seeds
  • ¾ cup of almond flour
  • Slightly less than ¼ tsp of stevia extract powder like nunaturals (You can taste test to see if you like it sweeter. I like it between a ¼ and ⅛ a teaspoon)
  • ½ tsp of salt
  • 1 tsp of cinnamon
  • ½ tsp of baking soda
  • 1 tsp of vanilla extract
  • ⅓ cup of liquid egg whites
  • 1 tablespoon of coconut oil, melted

This is how I made sugar free gluten free graham crackers:

Using two layers of parchment paper, press dough into a very thin layer to make the crackers the crispiest.

I baked mine on a pizza stone. I also baked it with the parchment paper under the dough to prevent sticking. I use a knife to cut them into squares. You can have more fun and use cookie cutters if you like.

I baked in my oven at 350 degrees for 18 minutes.

Sugar Free Graham Crackers

A sugar free version of your favorite snack cracker. This is also grain and gluten free too!
Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes
Course snacks
Servings 30 crackers

Ingredients
  

  • 3/4 cup of ground flax seeds
  • 3/4 cup of almond flour
  • Slightly less than 1/4 tsp of stevia extract powder like nunaturals You can taste test to see if you like it sweeter. I like it between a 1/4 and 1/8 a teaspoon
  • 1/2 tsp of salt
  • 1 tsp of cinnamon
  • 1/2 tsp of baking soda
  • 1 tsp of vanilla extract
  • 1/3 cup of liquid egg whites
  • 1 tablespoon of coconut oil melted

Instructions
 

  • Preheat oven to 350 degrees.
  • Mix all the dry ingredients together.
  • Next add in the liquid ingredients and mix together well.
  • Form a ball of dough, and place on parchment paper.
  • Place another piece of parchment paper over dough and use a rolling pin or your hands to form a very thin dough layer (about a 1/4 an inch).
  • Cut your dough into squares or rectangles.
  • Bake crackers in oven for 15-20 minutes.
  • Let cool before serving.
  • Should keep for 1-2 weeks in sealed bag.

    • My daughter polished off what I had of my last batch last night, so I’ll be making them again. I was buying a lot of grain free type crackers for her at the store. Now, I’m saving money by making them myself. They would also work as a savory cracker with just a few changes and would be great for a spicy dip… yum!

    • The crackers on the outside get crunchier than the ones in the middle. You could probably make them all the crunchiest if you separated them out like cookies. Even the ones in the middle aren’t soft like cookies though, more like a cracker. Hope this helps!

    • Hi Nancy! I haven’t tried them with whole eggs before, so I’m honestly not sure how they would turn out. I know the eggs and the flaxseeds are what holds the crackers together. The yolk would add more protein too which would be good. You can try and let me know what you think of the texture.
