4 Tips to Help you Cut the Sugar

Just say no to SUGAR!!

This is not a new idea. Lots of popular diets have come to the conclusion that our sugar is out of balance in our Modern diet and this is the cause of our expanding waistbands.

Management of your Sugar and Carbohydrates is crucial for weight loss and your general health.

When our system gets overloaded with too many sugar and carbs, our cells start storing extra carbs as fat in our cells. Our cells love to store carbs, so they are very eager and ready when we over eat our carbs. If we eat a moderate or low carb diet, then we can burn those carbs before they get the chance to be stored as extra fat.

How to get 8 Servings of Fruits and Vegetables

I would consider myself a very healthy person…

For the most part – I do try to stick to that 80/20 rule of eating healthy. (Except on vacations, haha!)

As much as I tried to eat a salad every day, and trying new vegetables as side dishes each night…

I just knew I wasn’t getting everything in that I needed.

and I felt it too…

What about super foods?

We all know we should be eating them everyday, we know how important they are (do antioxidants ring a bell?)… but how many of us eat 52 herbs and superfoods each day?

Crock Pot Creamy Chicken Mushroom Casserole

Crock Pot Creamy Chicken Mushroom Casserole

This is a total comfort food post here… I made this dish trying to recreate a dish I used to make for my husband that used cream of soup yuckiness. I was so excited with how yummy and wonderful this casserole came out using real ingredients to make the sauce. It was so easy to make to, because you use your slow cooker to do all the work.

This Creamy Chicken Mushroom Casserole is fairly low carb. I used Joseph’s pita bread for the topping. If you need to be gluten free, I would use gluten free bread crumbs.

Low Carb Cheese Stuffed “Cornbread” Muffins

When I’m eating soup, I want some sort of bread to go along with it. I love a piece of grain free cornbread to sop up all the flavors. This is a really fun Grain free and low carb muffin because it is stuffed with cheese.

This low carb cheese stuffed muffin goes really well with Tomato soup. When I think of tomato soup, I immediately think of a grilled cheese sandwich. This is an easy grain free substitution to go along with your soup.

My daughter loves cheese sticks. She thought it was such a fun baking trick to cut the mozzarella into one inch pieces and stick them in the muffin batter.

Healthy Chicken a la King

I had a reader ask for a request recipe makeover: Chicken a la King. I felt up to the challenge to make this dish healthy. So I pulled out my Roshto Family Cookbook and found our family recipe.

Chicken a la King Family recipe

It looked fairly simple overall. I did some digging online and looked at Food Network’s recipe and Allrecipes. Every Chicken a la King recipe I found was different.

The key ingredients seemed to be chicken, mushrooms, onions in a creamy seasoned sauce. Some recipes served with pasta while others served with biscuits.

Gluten Free Cake Round Up

Gluten Free Cake Round Up

This past year, my husband and I discovered that we both were reacting to gluten in our food. Not so much of an allergy, but definitely an intolerance. Did you know that up to 6-10% estimated people are celiacs or have a gluten allergy? Wheat products are not easy for human to digest even for the person without celiacs disease.

Phytates in the grains bind to other minerals like magnesium and are hard to digest. These phytates can make your digestive system inflamed overtime. They can also cause deficiencies, a leaky gut or just impair your immune system.  Because of these factors, it is becoming more and more common for people to go Grain Free (Read our story here and here)

Low Carb Faux-tato Salad

Low Carb Radish “Potato” Salad

I may have mentioned before that I am a Louisiana girl. With all this winter and cold, I had to pull out my huge soup pot to make a pot of gumbo. The way I like to eat gumbo is with potato salad and rice. I needed to transform this very high carby meal into a lower carb one. First I made rice using cauliflower. Next I made my gumbo with no roux making it low carb as well.

I had done some research and found that radishes were pretty low carb and similar in texture to potatoes. I figured I would try to turn my potato salad into a Radish “Faux-tato” Salad. Adam and I both really loved it. Adam was very skeptical at first. I had mad potato salad using red potatoes before, and it looked very similar in color. Adam said that is exceeded his expectations.

Trim and Healthy Asian Lettuce Wraps

I fell in love with lettuce wraps not to long ago… and I am hooked. We had them first at Cheesecake Factory. They were chicken and mushroom lettuce wraps and they were amazing! I was hooked from the first bite. I knew I would need to figure out a way to make these at home, because I couldn’t afford to go to Cheesecake Factory as often as I would want to eat these Asian lettuce wraps.

Asian Lettuce Wraps

Since opening my world to lettuce wraps, I have a love for all things wrapped in lettuce.
