Summer is finally on its way! We are having a neighborhood cookout today to celebrate the warmer weather and longer days. I wanted to bring something somewhat healthy, because it is so easy to bring something unhealthy to parties and celebrations.

 

This is one of my favorite salads. Broccoli Salad filled with vegetables and satisfying cheese and dressing – yum!

 

This may be a crossover because of the carbs from the raisins, but it is still lower in carbs than most salads. My mom used to buy this salad at the grocery store, then we learned how to make it ourselves.

I love this recipe! This has become a staple in my house. I put this sugar free dip/topping on my One Serving Cookie. I put this one my Peanut Butter Crunch Cake.  I put this on my Chocolate Chip Cookie Oatmeal.  I don’t know what I would do without it.

This is a wonderful fruit dip. I love it with apple slices and bananas.

This is also a wonderful topping. I put it on everything these days from chocolate muffins to oatmeal.

I love mint chocolate chip anything. It is one of my favorite ice cream flavors. I was really wanting to create a dip that would go with my low carb Graham crackers that would be a good party food.

Mint… ah, so refreshing.

Oatmeal Cookies are a childhood favorite of mine. I love oatmeal cookies and cream together. These Apple Oatmeal Cream Pies are the prefect combination of both flavor and health benefits.

Apples are full of vitamins and minerals. They add a natural sweetness to the cookie as well. Oatmeal is a great food for fiber as well as for your heart. Oats are also good for stabilizing blood sugar because of its magnesium content.

Coconut milk is used for the cream to keep this dairy free. To create the full body of whipped cream, glucomanan is used to stiffen and keep the cream at a semi-solid. I love glucomannan and use it all the time. It is full of fiber and has been used for centuries in Japan. It can help fill you up, so you aren’t tempted to overeat. I buy mine glucomannan on Amazon. I love it as a thickener because, you can use it with cold foods. It doesn’t need to be heated to activate the absorbing properties.

I’m so glad I discovered this recipe. I really am in love with coconut flour. It is the perfect flour for making a grain free cookie. I also just started using cocoa nibs in baking. They are a wonderful substitute for filling my desire for chocolate chips. If you like dark chocolate, I think you will love these.

Who doesn’t love chocolate chip cookies? I think everyone gets that craving at night… but you don’t want to make a whole batch of cookies (and be tempted to eat them all – because none of us have ever done that *cough*).

What is Stevia?

We learned in Cut the Sugar, that we need to make changes to reduce the sugar in our diets. I am so excited to see more and more Stevia products on the shelves. This is great news for people wanting a zero calorie, healthy sugar alternative.

What is Stevia exactly? 

Stevia is actually derived from a plant. It is related to a daisy and ragweed (I’ll take the daisy, thank you!). The Stevia plant can be found in Paraguay, Brazil, and Argentina and it is cultivated in China. You can even grow it yourself if you want! Stevia has zero calories and is 200 times sweeter than sugar without affecting blood sugar. Since it is sweeter than sugar, a little goes a long way! You also don’t want to over do Stevia because there can be too much of a good thing, then it will taste bitter.

I must confess, I love chocolate. Before this recipe, I would grab a few tablespoons of Enjoy Life Semi-Sweet Chocolate Chips (affiliate link).
