Cranberry Pecan Chicken Salad
A simple and delicious Cranberry Pecan Chicken Salad.
Angela Parker:
  • 3 cooked chicken breasts cubed (grilled, baked or boiled)
  • 1 cup of Sugar Free Cranberry Sauce:
  • ½ an onion finely chopped
  • ½ teaspoon of salt
  • ¼ teaspoon of black pepper
  • 1 teaspoon of Italian seasoning
  1. In a nonstick pan (I use Orgreenic). Add one teaspoon of coconut oil.
  2. Stir fry onion until translucent.
  3. Turn heat down to medium low.
  4. Add seasonings and cranberry sauce. Mix to combine.
  5. Add in the cubed chicken and chopped pecans.
  6. Heat until warmed through.
  7. Serve on salad or in a low carb pita
On my spinach salad, I added sliced mushrooms and more onion. You could add some feta cheese too for an S meal.
