Iced Chocolate Chip Cookie in 2 Minutes
A Gluten Free, Grain free Iced Chocolate Chip Cookie in 2 Minutes

  • 2 tablespoons of Coconut four
  • 1 teaspoon of baking powder
  • pinch of salt
  • 1 teaspoon of vanilla extract
  • 1 egg
  • 3-4 tablespoons of almond milk (sometimes I pack down the coconut flour and it is more dense than other times, add enough milk for it to be wet and similar to cookie dough)
  • stevia extract (I use 5-7 shakes of nunaturals) Taste test if using another sweetener
  • 1 tablespoon of cacao nibs
  • Optional Icing:
  • ⅓ cup of Greek yogurt
  • pinch of salt
  • 1 teaspoon of cocoa powder (use 1 tablespoon of peanut butter Or a teaspoon of peanut flour for peanut butter flavored)
  • ½ teaspoon of vanilla exract
  • stevia (I use about 3-5 shakes of nunaturals stevia extract powder)
  1. Cookie:
  2. Mix everything well together.
  3. Form into cookie on plate or you can leave it in the bowl
  4. Microwave for 1.5 - 2 minutes.
  5. or Bake at 350 for 7-10 minutes
  6. *Optional Icing*:
  7. Mix everything and top cookie with chocolate or peanut butter yogurt "icing"
