Iced Chocolate Chip Cookie in 2 Minutes

A Gluten Free, Grain free Iced Chocolate Chip Cookie in 2 Minutes

Ingredients
  

  • 2 tablespoons of Coconut four
  • 1 teaspoon of baking powder
  • pinch of salt
  • 1 teaspoon of vanilla extract
  • 1 egg
  • 3-4 tablespoons of almond milk sometimes I pack down the coconut flour and it is more dense than other times, add enough milk for it to be wet and similar to cookie dough
  • stevia extract I use 5-7 shakes of nunaturals Taste test if using another sweetener
  • 1 tablespoon of cacao nibs
  • Optional Icing:
  • 1/3 cup of Greek yogurt
  • pinch of salt
  • 1 teaspoon of cocoa powder use 1 tablespoon of peanut butter Or a teaspoon of peanut flour for peanut butter flavored
  • 1/2 teaspoon of vanilla exract
  • stevia I use about 3-5 shakes of nunaturals stevia extract powder

Instructions
 

  • Cookie:
  • Mix everything well together.
  • Form into cookie on plate or you can leave it in the bowl
  • Microwave for 1.5 - 2 minutes.
  • or Bake at 350 for 7-10 minutes
  • *Optional Icing*:
  • Mix everything and top cookie with chocolate or peanut butter yogurt "icing"
