We all know that our weekday schedules keep getting crazier and crazier. With soccer practice and ballet lessons, we practically are a taxi driver for our kids during the week. That means less time in the kitchen to prep meals and get dinner on the table. I’m sharing my 5 tips to make low carb prep easy even during the busy weekdays.

Here are five easy low-carb meal prep tips for busy weekdays:

  1. Plan Ahead: Take a few minutes at the beginning of the week to plan your meals. Choose recipes that are low in carbs and high in protein and fiber. Make a shopping list and stick to it to ensure you have all the ingredients you need on hand.
  2. Batch Cooking: Cook large batches of low-carb staples like grilled chicken, roasted vegetables, and quinoa or cauliflower rice at the beginning of the week. Portion them out into containers so you can easily grab and go for meals throughout the week.
  3. Prep Quick and Easy Snacks: Keep low-carb snacks like nuts, cheese, hard-boiled eggs, and cut-up vegetables on hand for quick and easy snacking. Portion them out into snack-size bags or containers so you can grab them on your way out the door.

Meal Planning for the Month

This video shows a process that I used to make meal planning easier for the month. I started doing this monthly meal planning and meal rotation to make grocery shopping and meal planning easier by repeating the same recipes for 4 weeks.

After the month was over, I would create a new monthly meal plan. This was good to help us eat in season foods, simply our grocery shopping, and reduce meal time frustration.

Recipe Binder for Meal Prepping

One thing that really helped me when I was getting started with meal prepping was to gather my favorite tried and true recipes and put them in a recipe binder. This made meal prepping and planning easier for me because I didn’t have to search on Pinterest to find what I wanted to cook that month.

If I wanted to add a new recipe to my binder and meal rotation, I just printed it out and add it no problem. I only added it to my recipe binder if I was sure it was a winner and I would be making it over and over.
