Berries are a love of mine. I love how naturally sweet they are. I love that they are a low glycemic food. I love that you can even grow your own at home. I used to have 3 blueberry bushes… Maybe I should plant some at my new house.

I was starting to dream (I dream about food mostly) about a berry dessert that was egg free, gluten free, and dairy free. It took a little time, but finally was able to create this beautiful dessert.

Sugar Free Hot Chocolate Mousse is the perfect sugar free treat that you won’t have any guilt over not sharing. It is light and airy. This is also gluten free with a dairy free option.

This Sugar Free Hot Chocolate Mousse is made with almond milk and glucomannan as its thickening agent. Together with flavors of chocolate and vanilla blend into the perfect dessert or snack.

I topped mine with cacao nibs because I’m kind of obsessed with them right now. If you like dark chocolate, you need to check them out. They can be eaten raw, but we are enjoying them sprinkled on desserts and oatmeal for a special touch.

My husband and daughter both were impressed with how simple it was to make and how delicious the final product is. Sometimes you want to taste of hot chocolate without the heat. This will be the perfect dessert for just that occasion.

What could be better than peanut butter and chocolate in a single serving cake?

I love this peanut butter crunch chocolate mug cake for a dessert recipe because it is sugar free, grain free, and gluten free. 

I’m loving single serving cakes because you can enjoy them fresh out of the oven or microwave – which is always when they taste the best. I also love topping this with Peanut flavored Greek yogurt. Greek yogurt is so versatile. I love how it can be a sub for sour cream or be sweetened to act like an icing.

Iced One Serving Chocolate Chip Cookie {In 2 Minutes}… Miracles do happen.

I’m so glad I discovered this recipe. I really am in love with coconut flour. It is the perfect flour for making a grain free cookie. I also just started using cocoa nibs in baking. They are a wonderful substitute for filling my desire for chocolate chips. If you like dark chocolate, I think you will love these.

Who doesn’t love chocolate chip cookies? I think everyone gets that craving at night… but you don’t want to make a whole batch of cookies (and be tempted to eat them all – because none of us have ever done that *cough*).

This recipe is wonderful because it is sugar free, grain free, and gluten free. We are trying to be as gluten free as possible because we discovered last year that both Adam and I were reacting to gluten in our diets. We switched to baking with coconut and almond flour primarily and have really loved all the new recipes and options that are available.

I chose to make a chocolate icing for our cookie. It is totally optional, but we really loved it. You could also make it plain without the cocoa powder. Another option would be to mix a little cream cheese in with your Greek yogurt like in my King Cake in a Mug. 

If you are a Trim Healthy Mama this one serving chocolate chip cookie is going to be a satisfying treat because it is low sugar, but high in good fats.

Low Fat Low Sugar Oatmeal Apple Cookies

I am really loving having a toddler who loves to cook. We have really enjoyed getting in the kitchen together and experimenting with fun recipes. When she helps cook something, she is also more motivated to try it.

I found this recipe for Apple Breakfast Cookies from Melomeals and they seemed like the perfect afternoon snack for Aidalyn and me to make together. These are full of nutrients and low on sugar, so they are the perfect snack. I also loved that these contain a good amount of fiber. Sometimes toddlers are prone to constipation and this would be an easy treat to give them when they need help getting things moving along.

I cut the original recipe in half, because I wanted it all to be able to fit nicely in my food processor at one time. Making it fit in my food processor made it an easy activity for Aidalyn to help me with and easy clean up as well. She loves baking and I always like to find recipes that are easy enough for her to make. 

She loved this recipe so much, which is saying a lot for my picky toddler. This would be a good option for a quick breakfast on the run. You could give these to your kids instead of purchased cereal oat bars from the store. For more protein, you could add a scoop of vanilla protein powder.

You could also add honey as your sweetener if you don’t use stevia or xylitol.

 King Cake in a Mug with Cream Cheese Topping

I may live in Richmond, Va now, but I am born and raised a Louisiana girl. On top of being raised in Louisiana, I have a birthday that falls during Mardi Gras. It became a tradition for me to have a King Cake for my birthday cake for several years until I moved last year. Then my mom, hearing my laments of not being able to get a King Cake in Richmond, mailed me a King Cake from Louisiana… Let’s just say I shared… but I didn’t.  

This year… I am so happy to be able to enjoy my King Cake in a Mug every day of Mardi Gras if I want with NO guilt! This is a grain free, sugar free treat that you can enjoy with a cup of rich Community Coffee.  

One thing I like about this King Cake in a Mug, is that it is really light and fluffy. I also love the cinnamon and nutmeg that go hand and hand for the perfect combination to the cream cheese topping. The added lemon flavor enhances the cream cheese “icing.” Obviously we are leaving off the sugar crystals… but you can close your eyes and imagine some purple, gold, and green all over your delicious, guilt free King Cake in a Mug.

One tip to make your King Cake in a Mug is to top it with just a little xylitol. This will act like your sugar crystals and take you back to Louisiana. I also used turmeric to color the top of my cake in a mug.

The Best Brownie in a Mug Recipe!

This is the BEST Brownie you can make in a mug!

I must confess, I love chocolate. Before this recipe, I would grab a few tablespoons of Enjoy Life Semi-Sweet Chocolate Chips (affiliate link). These were not the perfect solution although they had great ingredients, they were still filled with sugar. This brownie in a mug is my go to chocolate craving killer. You just mix this brownie up in one minute and microwave… then sit down and enjoy the hot, fresh Brownie in a mug!

Sometimes you just need chocolate. Some days you just need a brownie! Who wants to bake brownies for 20 minutes when you can enjoy this brownie cake in a mug in less than 2?

Adam and I love to enjoy this treat as an S (Satisfying) Trim Healthy Mama dessert once the girls go to sleep at night. It is our little date escape (in a mug). We top it with some stevia sweetened Greek yogurt for an extra special addition. Pour yourself a cup of coffee to go with it, and you have yourself a little escape during nap time.
