For me this came at such a shock the first time. I was very small when I got pregnant, probably below 120 pounds. I wasn’t gaining excessive weight during pregnancy. I was working out almost every day (waking up at 5 am and going to the gym). I ate very healthy (whole foods primarily).

Holy Avocados, Batman!!!

Avocados are considered a superfood these days.

They are a pretty mighty little fruit when you eat them.

I love avocados on salads, on sandwiches, with mexican food and now just recently have learned they are great in a smoothie! Recipes for smoothies here.

From Mercola.com: Avocados can protect you from liver damage. Rats who were fed avocados during a study and injected with a substance that causes liver damage were reported to have the least amount of damage as compared to rats fed other fruits.

Avocados are a great source of good fats in your diet. They have anti-inflammatory properties, promote heart health, and have more than twice the potassium than a banana.

Avocados are also great for your beauty regimen. Put cut pieces on your eyes for puffy eyes or make an eye cream. Use it as a facial mask. Use it on your hands to make them smooth. Use it on your hair as a deep conditioner.

So next time you are thinking about that plate of fajitas or fixing a smoothie – maybe you can throw in some avocados!

White bean Vanilla Cake – From the Modern Alternative Mama

When we were getting closer to Aidalyn’s birthday party, I knew I didn’t want her to have a “typical” birthday cake loaded with processed sugar and non-nutrients. I did a lot of digging. I wanted something that was grain free but didn’t have a lot of hard to find ingredients. I found this to be easy and very tasty too! I ended up making a cream cheese frosting with just a block of cream cheese mixed some milk to make it smooth. I may have sweetened it with a touch of agave nectar. Sophie and Aidalyn seemed to approve!

I baked mine as cupcakes – seeing that we were having a “cupcake” themed party.

White Bean Vanilla Cake

Ingredients:

  • 3 c. white beans, cooked and plain
  • 9 tbsp. coconut oil
  • 1 c. + 2 tbsp. raw honey
  • 6 eggs
  • 2 tbsp. vanilla
  • 3/4 tsp. sea salt
  • 1 tsp. baking soda

Directions:

Add all ingredients to a blender and blend on medium, then high until smooth.  Pour into two well-greased  9″ pans and bake at 350 for 35 – 40 min.  Once cooled, remove from the pans carefully and serve plain, with fresh jam (fruit blended with honey), fresh fruit, or however you like! read more
