7 Ways to Use Cranberry Sauce

cranberriesCranberries are in season! I love cranberries for many reasons.

They are tart and add a nice flavor to turkey and dressing on Thanksgiving. They are great paired with pumpkin in muffins and breads. And they make a great No Sugar Added Cranberry Sauce!

They are also very healthy for you!

Cranberries are high in antioxidants. They are great for keeping your urinary track healthy. Cranberries are considered one of the World’s Healthiest Foods. It is very high in vitamin C, so it will keep you healthy during the sick season.

Here are my top picks for using cranberries this season:

1) Eat it with Oatmeal

Cook 1/2 cup of oats with 3/4 cups of water and 1/4 cup of cranberry sauce. Season with salt and stevia. Top with some stevia sweetened greek yogurt!

2) Use as a spread or topping on bread

Then you go to your 27 weeks appointment and they tell you that you have gestational diabetes…

For me this came at such a shock the first time. I was very small when I got pregnant, probably below 120 pounds. I wasn’t gaining excessive weight during pregnancy. I was working out almost every day (waking up at 5 am and going to the gym). I ate very healthy (whole foods primarily).

I love Chinese take out… I love Chinese food!

These do not make me a Trim Healthy Mama…

But thankfully my favorite part of Chinese food is the vegetables.

Here is my take on a Better than Take out – or Take out-Fake out Chinese Stir fry.

This Trim Healthy Stir Fry uses glucomannan to thicken it. This is amazing stuff if you haven’t tried it yet. You can read more about glucomannan here. It is a thickener that is gluten free, carb free, and taste free (so you can add it to anything!). You can thicken puddings, soups, or Trim Healthy Sir Fries.

Trim Healthy Mama’s For this recipe to be fuel pull, your serving needs to have one teaspoon of coconut oil in it or less. You can omit the coconut oil in the steaming vegetables phase to reduce some fat per serving. If you want this to be an S meal full of healthy fats, then don’t worry about how much coconut oil is in the meal and just enjoy.

Cauliflower Pizza Crust

I found this recipe several months ago and fell in love with the simplicity and flavor of this pizza crust. You won’t believe it is grain free! It is so versatile in that you can choose whatever toppings or sauce you want. Hope you enjoy it as much as we do!

It does have cheese in it, so you may want to avoid it if you are prone to being sensitive to dairy products.

Roasted Eggplant with Beef Marinara Sauce on top

Beef Burgers on a bed of Salad Greens

Sides:

Baked Zucchini with coconut oil and mozzarella

Roasted baby carrots

Roasted sweet potatoes

Buffalo Burgers and a bath

Tried a new recipe last night:

Buffalo, Spinach, and Quinoa Burgers – Original idea here

Ingredients

1/2 cup (dry) quinoa
1 (10 oz) box frozen chopped spinach, thawed and excess moisture squeezed out
2 eggs
1 tsp of Garlic powder                                                                                             1/2 teaspoon salt
1 tsp black pepper
1 lb ground Buffalo

Directions

1. Cook quinoa to package instructions. Set aside until cool enough to handle. Place in a large bowl.
2. Add spinach, egg and spices to bowl. Mix well with a fork.
3. Add buffalo and combine with clean hands. Form into equal patties.
4. Cook in a skillet on medium-high heat with coconut oil to desired doneness, or in a 400 degree oven for 20-30 minutes.

After dinner, it was bath time!

She loves putting all the bath toys in her little hanging basket after bath time is done. It was a great evening.
