Gluten Free Keto Biscuits
Most keto recipes are also gluten free (but they don’t have to be!) If you are needing to follow a gluten free diet, I would just make sure you double check all your ingredients and read labels to confirm you are eating gluten free foods.
This dairy free keto biscuit recipe is also gluten free because it uses gluten free flours like almond flour and coconut flour. I personally love the combination of these two flours in keto baking because I feel like they compliment each other well. Almond flour can be overly nutty and crumbly by itself. Coconut flour can have a stronger coconut taste or be too dry.
And just a quick reminder, you can’t substitute almond flour for coconut flour. These two flours work completely different and your recipe will not turn out if you try to substitute these flours.
Egg Whites in Keto Biscuits
One secret ingredient that makes these keto biscuits work is the whipped egg whites. I personally just buy egg whites from the store, but you can totally separate your eggs whites manually. If you are manually separating your egg whites, you will need about 9 large eggs to equal 1.5 cups of egg whites.
Remember to Chill
For this dairy free keto recipe to work, I want to highlight the step to let it “chill.” Coconut flour and almond both need time to absorb the liquid from the egg whites to make a firm dough that you can mold into biscuit shapes. You really only need to let it chill 15 minutes or so. You can check your dough during the chilling process to see if the dough is less wet and more of a dough consistency. When you see this, you will know you are ready for the next step of scooping the dough onto your baking sheet.
Variations for Dairy Free Keto Biscuits
With this keto biscuit recipe, you will find it makes a great biscuit for breakfast or lunch! You can turn this into an egg and sausage biscuit for breakfast or a keto friendly biscuits and gravy. It is the perfect biscuit for a little dairy free butter and sugar free jam. You can enjoy this biscuit as a complement to your dinner table with any meal!
Can you freeze keto biscuits?
Yes! You absolutely can freeze this keto biscuit recipe. I would make sure they completely cool down before you put them into your freezer safe storage. This is a great way to batch make these biscuits so you can make extra and pull them out during any busy weeknight meal.
Keto Biscuit Ingredients
- 1.5 cups of egg whites
- 1.5 cup blanched almond flour
- 1/2 cup coconut flour
- 2 teaspoon baking powder
- 1/2 teaspoon salt
- 3 tablespoons coconut oil, chilled
Keto Biscuit Directions
- Preheat oven to 400 degrees.
- Cover a baking sheet with parchment paper.
- Mix almond flour, coconut flour, baking powder and salt together in a large mixing bowl.
- Cut in cold coconut oil with a fork until the mixture is crumbly. Place the bowl in the refrigerator for 10 minutes.
- In a medium bowl whisk egg whites until they are very frothy.
- Fold the egg whites into the chilled flour mixture until well combined.
- Scoop about 1/4 cup of dough onto the baking sheet and smooth the top to form each biscuits, an ice cream scoop works well in this step.
- Bake biscuits for 18-24 minutes (until golden brown)
- Makes 8 large biscuits
