4 Tips for Cooking with Glucomannan

I love glucomannan. It is one of my new favorite additions in my kitchen. It is versatile for so many uses like thickening gravy to making a wonderful milk shake.

Glucomannan is an amazing addition to your diet to help with weight loss, blood sugar levels, and improve HDL cholesterol levels. I’ve shared why I love glucomannan in this post: “What is Glucomannan?” Today I’m going to share my Tips for cooking with glucomannan in your kitchen.

1. Store your glucomannan in a shaker.

You can use an empty salt shaker or anything that has tiny holes to help control how much glucomannan comes out at one time. I’m actually using an empty nunaturals stevia shaker for my glucomannan. read more

Oh Yummy. I love curry. This is such an easy recipe for a Crockpot Chicken Curry. Adam and I love Indian food. We have a few Indian restaurants around here, but I love being able to have a good curry at home.

Adam bought me a great Indian Cookbook a few years ago that really focused on the main spices in Indian dishes. There are no crockpot recipes in that cookbook, haha. I did learn a lot of the flavors though.

You could additionally top this Easy Crockpot Chicken Curry with some Greek yogurt.

We served it with riced cauliflower because we are trying to eat lower carb meals. You can serve with brown rice if you like.

Adam says it is a good balanced curry because it isn’t too hot, yet has a lot of good flavor. He also enjoyed the riced cauliflower with it. Aidalyn just ate the chick peas plain, haha. My little picky eater.

For Trim Healthy Mama’s This Easy Curry would be an Energizing meal because of the carbs in the chick peas. Using Lite coconut milk allows us to keep the fat low enough to be considered an energizing meal. Check your lite coconut milk grams of fat. Mine had 4.5 grams in 1/3 cup of coconut milk. This easy crockpot chicken curry serves about 6.

We are having a snow filled winter here in Virginia. This Louisiana girl doesn’t know what all this white stuff is that keeps falling from the sky. Thankfully, I don’t have much reason to leave the house when it snows so I get to stay warm and cook for my family.

I love cooking this Low Carb Cheeseburger Vegetable Soup on a snow day when it has all morning to simmer. Soup is the perfect winter meal. 

Soup can be a lunch or dinner during the winter months to warm and satisfy you. Bone broths are so full of nutrients that keep you and your family healthy during the sick months. Broths are also one of the 4 foods that all kids should be eating!  This is one that your kids will want to eat two bowls full of. What kid can resist cheese?

Cheeseburger soup is full of all the cheese and meat that you would expect from a cheeseburger with all the vegetables that you love from a vegetable soup. It is the perfect combination. You can adjust the vegetables that your family loves the most. We found some local squash this past week, so it was just the right vegetable to include in this low carb soup.

I like to add a little glucomannan into my soup to thicken it with no added carbs and staying gluten free. I buy mine off of amazon. You can probably also find it in your local health food store (or use xanthan gum or another thickener if you like).

Sugar Free Hot Chocolate Mousse is the perfect sugar free treat that you won’t have any guilt over not sharing. It is light and airy. This is also gluten free with a dairy free option.

This Sugar Free Hot Chocolate Mousse is made with almond milk and glucomannan as its thickening agent. Together with flavors of chocolate and vanilla blend into the perfect dessert or snack.

I topped mine with cacao nibs because I’m kind of obsessed with them right now. If you like dark chocolate, you need to check them out. They can be eaten raw, but we are enjoying them sprinkled on desserts and oatmeal for a special touch.

My husband and daughter both were impressed with how simple it was to make and how delicious the final product is. Sometimes you want to taste of hot chocolate without the heat. This will be the perfect dessert for just that occasion.

No Roux Chicken Sausage Gumbo

I have mentioned before, that I am a born and raised Louisiana Girl. You can take the girl out of Louisiana, but you can’t take Louisiana out of the girl! In Louisiana, when the weather gets cold (that one night, ha), everyone cooks a huge pot of gumbo to warm themselves. Our gumbo is full of chicken and sausage, and the trinity (onions, bell peppers, and celery). 

What makes this gumbo so special is that it doesn’t use a roux to thicken. Rouxs are made from cooking flour in butter and then basically making a very thick soup from that gravy. What I used as my thickening agent is glucomannan. I love glucomannan so much for thickening up my foods. I use it in milkshakes, puddings, whipped cream, cakes, and now my gumbo! I buy it from Amazon.

We also serve our gumbo with rice and potato salad. If I’m trying to keep my blood sugar stable, neither of these are going to work with my gumbo. So I had to improvise. First I made rice using cauliflower. Cauliflower rice is pretty easy to make if you have a food processor.

I’m not sure what I would do without my food processor. I use it almost every day now! I shred cheese using it to save money (and avoid the fillers that are added to pre-shredded cheese). I use it for making riced cauliflower and for processing my radishes in my Faux Potato Salad.

I fell in love with lettuce wraps not to long ago… and I am hooked. We had them first at Cheesecake Factory. They were chicken and mushroom lettuce wraps and they were amazing! I was hooked from the first bite. I knew I would need to figure out a way to make these at home, because I couldn’t afford to go to Cheesecake Factory as often as I would want to eat these Asian lettuce wraps.

Since opening my world to lettuce wraps, I have a love for all things wrapped in lettuce. I know that if you haven’t tried them yet, you may not think they could be that wonderful… but just wait til you try these!!! I am going to be working on Mexican Lettuce Wraps, Peanut Sauce Lettuce Wraps, and Cheeseburger lettuce wraps.

Most lettuce wraps use a sauce that has been thickened by flour or another off plan thickener. This recipe is unique because it uses Glucomannan Powder (affiliate link). This amazingly versatile low carb thickener is made from the Konjac root. It is tasteless and calorie free. For an even added bonus, it can help keep you full longer and help you lose weight! I love Chinese take out… I love Chinese food!

These do not make me a Trim Healthy Mama…

But thankfully my favorite part of Chinese food is the vegetables.

Here is my take on a Better than Take out – or Take out-Fake out Chinese Stir fry.

This Trim Healthy Stir Fry uses glucomannan to thicken it. This is amazing stuff if you haven’t tried it yet. You can read more about glucomannan here. It is a thickener that is gluten free, carb free, and taste free (so you can add it to anything!). You can thicken puddings, soups, or Trim Healthy Sir Fries.

Trim Healthy Mama’s For this recipe to be fuel pull, your serving needs to have one teaspoon of coconut oil in it or less. You can omit the coconut oil in the steaming vegetables phase to reduce some fat per serving. If you want this to be an S meal full of healthy fats, then don’t worry about how much coconut oil is in the meal and just enjoy.
