One thing I love about quiche is you can literately use anything in your fridge! So I made my crust first… then I just rummaged in my fridge and found some fresh mushrooms, bacon to cook and of course mozzarella!

  • 2 cups of almond flour
  • 4oz of cream cheese


  • Using a food processor, mix together to form ball of dough.
  • Press dough into 9 inch pie pan.


  • 1 cup mushrooms
  • 1 cup of mozzarella cheese
  • and cooked bacon.
  • 4 eggs
  • 1 cup of heavy whipping cream
  • Salt & pepper to taste.


  • Layer the mushrooms, cheese and bacon on crust.
  • Mix heavy whipping cream and eggs together and pour over toppings.
  • Bake at 375 for about 40 minutes.
