Low Carb Cinnamon Tortilla Chips with Cinnamon Pecan Cream Cheese Dip

Tell me if this sounds familiar…

You find yourself REALLY wanting a sweet snack but knowing that you REALLY don’t need all the sugar?

That’s like my whole life right now! Managing my tendency toward gestational diabetes means that I really can’t deal with sugar or carbs so I’ve been experimenting!

Here’s my latest creation!

Low Carb Cinnamon Tortilla Chips

4 Low Carb Tortilla (I LOVE this one!)
1 Tablespoon of Butter melted
2-3 Tablespoons of stevia blend
1 Teaspoon of Cinnamon

Directions

Brush melted butter on each side of tortillas.

Mix stevia & Cinnamon together.

Cut tortillas into 6 triangles each and dip each side into stevia/Cinnamon blend.

Bake at 350 degrees on baking tray covered in parchment paper for 10 minutes.

Cinnamon Pecan Cream Cheese Dip

8 oz of cream cheese softened
1 tablespoon of stevia blend.
1/4 teaspoon on cinnamon.
1 Tablespoon of chopped pecans.

Directions

Beat together cream cheese, stevia, and cinnamon until smooth.

Fold in pecans.

Note: The stevia blend I use is a cup for cup substitute for sugar (this one is a good choice if you want to try it!). You can use any sweetener you like, just sweeten to taste.

Why is it so important to pay attention to how much sugar we eat?

Sugar has been identified as leading to cancer, obesity, heart disease, diabetes… and can even make you age quicker.

But one thing that most people don’t realize is how SNEAKY sugar really is!

Where is sugar hiding?

Sugar is found in almost ALL of our foods these days.

And it isn’t just sugar that we have to be aware of… it is everything that turns into sugar after we eat it… namely “Carbs.” read more

1 Minute Chocolate Muffin in a Mug

Chocolate makes everything a little better doesn’t it?

I’m always on the hunt for chocolate snacks that satisfy with my sweet tooth without overloading me on the sugar!

Note: If you didn’t know, I have struggled with Gestational Diabetes with each of my pregnancies, here’s some info on how I beat it naturally!

Given my history and just being honest with myself, if I don’t find sweet things (with chocolate hopefully!) that is satisfying I’m going to end up chowing down on cookies or ice cream.

Thankfully I have a new favorite (and SIMPLE) recipe!

Check out my recipe for a 1-Minute Chocolate Muffin in a Mug!

Here’s the Recipe Breakdown:

Ingredients

1 Egg
1 tablespoon of cocoa powder
1/2 tsp of baking powder (I prefer an Aluminum Free option if possible)
Pinch of salt
1 tsp of vanilla extract
2 tablespoons of almond butter (try to stick with unsweetened if possible!)
1 packer of stevia sweetener (my preferred no calorie sweetener)

Directions

  1. Grease a large mug (I usually recommend Coconut Oil)
  2. Mix all the ingredients together.
  3. Microwave for 1 minute on high

And that’s it!

I’m simple, yummy, and has almost no sugar (and a little protein from the egg!)

The Day I Failed My Gestational Diabetes Test

8 years ago… I was in my second trimester of my first pregnancy…

Everything was going well…

until I was 28 weeks and went for my gestational diabetes screening test.

I thought “I’m the healthiest person I know!” I got this!

But when my results came back that I had failed…

I was crushed.

I was shocked.

I felt all alone.

I needed a plan, but I honestly didn’t have any support system set up for myself.

All the recipes I had were “healthy” but used grains, beans, fruits, starchy vegetables.

Nothing I normally ate or cooked would work anymore.

I sat at the kitchen table every night for two weeks and cried.

Thankfully, now I have some (actually good!) low carb meals on the plan!

This week (I’m 16 weeks pregnant now with my third baby), as I was sitting down at the table… instead of crying, I was meal planning.

And it made me think… what is different here?

I’m in the same situation (albeit 8 years later!) and I possibly have the same diagnosis as I did 8 years ago, but this time…

I feel empowered.

I feel prepared.

I feel healthy.

On my piece of paper I wrote:

> Low Carb Tacos
> Guacamole & Bacon Open Faced Burgers
> Chicken Salad on Lettuce Wraps

The only difference was now I had my tool box.

I already have a pantry with products and staples to make healthy low carb recipes.

I already know what to eat.

Maybe you are thinking about changing your diet… but you feel lost – “What would I even eat?!?!” You may be asking…

4 Tips to Help you Cut the Sugar

4 Ways to Eat Less Sugar
4 Ways to Eat Less Sugar

Just say no to SUGAR!!

This is not a new idea. Lots of popular diets have come to the conclusion that our sugar is out of balance in our Modern diet and this is the cause of our expanding waistbands.

Management of your Sugar and Carbohydrates is crucial for weight loss and your general health.

When our system gets overloaded with too many sugar and carbs, our cells start storing extra carbs as fat in our cells. Our cells love to store carbs, so they are very eager and ready when we over eat our carbs. If we eat a moderate or low carb diet, then we can burn those carbs before they get the chance to be stored as extra fat. read more

I would consider myself a very healthy person…

For the most part – I do try to stick to that 80/20 rule of eating healthy. (Except on vacations, haha!)

As much as I tried to eat a salad every day, and trying new vegetables as side dishes each night…

I just knew I wasn’t getting everything in that I needed.

Crock Pot Creamy Chicken Mushroom Casserole

Crock Pot Creamy Chicken Mushroom Casserole

This is a total comfort food post here… I made this dish trying to recreate a dish I used to make for my husband that used cream of soup yuckiness. I was so excited with how yummy and wonderful this casserole came out using real ingredients to make the sauce. It was so easy to make to, because you use your slow cooker to do all the work.

This Creamy Chicken Mushroom Casserole is fairly low carb. I used Joseph’s pita bread for the topping. If you need to be gluten free, I would use gluten free bread crumbs.

I used my food processor to create bread crumbs using low carb pita breads. My food processor is one kitchen appliance gets a big workout in my kitchen these days.

I know not everyone loves mushrooms. Adam and I love mushrooms. Mushrooms seem to go really well with chicken in creamy sauces. I make a Creamy Tomato Mushroom Cream sauce that is always a hit.

Let’s talk about crock pots. How wonderful are they for busy moms (and wives)? I didn’t start using my crock pot much until I was in grad school and working crazy hours. It was still very much important to me to cook for Adam and myself using whole foods, but we were both tired at the end of the day.

I would prepare my crock pot dish the night before, and keep it in the fridge until the morning. Then before leaving for work, I would just set the crock pot bowl in the machine and turn it to low. When we would get home, the house would smell amazing and dinner was ready! How more awesome can you have it?

I hope you love this Crock Pot Creamy Chicken Mushroom Casserole as much as we do!
