When I’m eating soup, I want some sort of bread to go along with it. I love a piece of grain free cornbread to sop up all the flavors. This is a really fun Grain free and low carb muffin because it is stuffed with cheese.

This low carb cheese stuffed muffin goes really well with Tomato soup. When I think of tomato soup, I immediately think of a grilled cheese sandwich. This is an easy grain free substitution to go along with your soup.

My daughter loves cheese sticks. She thought it was such a fun baking trick to cut the mozzarella into one inch pieces and stick them in the muffin batter. read more

I had a reader ask for a request recipe makeover: Chicken a la King. I felt up to the challenge to make this dish healthy. So I pulled out my Roshto Family Cookbook and found our family recipe.

I may have mentioned before that I am a Louisiana girl. With all this winter and cold, I had to pull out my huge soup pot to make a pot of gumbo. The way I like to eat gumbo is with potato salad and rice. I needed to transform this very high carby meal into a lower carb one. First I made rice using cauliflower. Next I made my gumbo with no roux making it low carb as well. 

I had done some research and found that radishes were pretty low carb and similar in texture to potatoes. I figured I would try to turn my potato salad into a Radish “Faux-tato” Salad. Adam and I both really loved it. Adam was very skeptical at first. I had mad potato salad using red potatoes before, and it looked very similar in color.
