Baked Avocado Breakfast Recipe

If you are trying to follow a low carb or Keto lifestyle, getting healthy fats every day is so important!

Here’s a simple recipe for a delicious and healthy breakfast with only 2 main ingredients!

Ingredients

*1 Large Whole Avocado

*2 Eggs

*Salt and Pepper

*Fresh Herbs (Optional)

*Fresh Lemon (Optional)

Instructions

1. Cut the avocado, remove the seed and open up the inside of the avocado a bit to hold the egg.

Oh my goodness. I can’t believe this was low carb 

Even better, it took less than an hour to prepare and could be done completely in my Instant Pot!

I’m always looking for a quick and easy meal I can throw together in my Instant Pot. This ONE appliance has made it so much easier for me to cook more healthy meals at home – that tastes delicious!

Ingredients

* 2 lb ground beef
* 2 bags of frozen cauliflower florets 
* 1 bag of frozen onion and pepper blend
* 4 slices cooked bacon, chopped
* 1 tablespoon Italian seasoning
* 1⁄2 teaspoon salt
* 1⁄4 teaspoon black pepper
* 1⁄2 teaspoon red pepper flakes
* 2 garlic cloves, minced or 1 tablespoon of minced garlic from jar
* 1.5 quarts of beef broth
* 2 teaspoons arrowroot mixed with enough water to make a paste
* 1 cup heavy whipping cream

Now, being a Louisiana girl… I have a special place in my heart for gumbo. It’s the perfect meal for a cold fall or winter day!

The basis of the dish is the roux (a mix of flour and oil cooked into a peanut buttery consistency). The roux is the HEART of a good gumbo. I made a similar recipe for Thanksgiving that was just a broccoli casserole. This adds in some great protein from the tuna (or salmon) to get good Omega-3 fatty acids into your diet.
