That’s like my whole life right now! Managing my tendency toward gestational diabetes means that I really can’t deal with sugar or carbs so I’ve been experimenting!

Here’s my latest creation!

Low Carb Cinnamon Tortilla Chips

4 Low Carb Tortilla (I LOVE this one!)
1 Tablespoon of Butter melted
2-3 Tablespoons of stevia blend
1 Teaspoon of Cinnamon read more

Baked Avocado Breakfast Recipe

If you are trying to follow a low carb or Keto lifestyle, getting healthy fats every day is so important!

 

Here’s a simple recipe for a delicious and healthy breakfast with only 2 main ingredients!

 

Ingredients

*1 Large Whole Avocado

*2 Eggs

*Salt and Pepper

*Fresh Herbs (Optional)

*Fresh Lemon (Optional)

 

 

Instructions

1. Cut the avocado, remove the seed and open up the inside of the avocado a bit to hold the egg.

2. Crack the egg and pour into the opening of the avocado (1 egg per half avocado).

3. Season with Salt and Pepper to taste.

4. Bake at 425F (220C) for for 15 Minutes.

5. Top with Fresh Herbs and Lemon to taste.

Instant Pot Low Carb Hearty Italian Soup  

Oh my goodness. I can’t believe this was low carb 

 

Even better, it took less than an hour to prepare and could be done completely in my Instant Pot!

 

I’m always looking for a quick and easy meal I can throw together in my Instant Pot. This ONE appliance has made it so much easier for me to cook more healthy meals at home – that tastes delicious!

 

You are going to love this! 

 

 

Ingredients

* 2 lb ground beef
* 2 bags of frozen cauliflower florets 

* 1 bag of frozen onion and pepper blend
* 4 slices cooked bacon, chopped
* 1 tablespoon Italian seasoning
* 1⁄2 teaspoon salt
* 1⁄4 teaspoon black pepper
* 1⁄2 teaspoon red pepper flakes
* 2 garlic cloves, minced or 1 tablespoon of minced garlic from jar
* 1.5 quarts of beef broth
* 2 teaspoons arrowroot mixed with enough water to make a paste
* 1 cup heavy whipping cream read more

ONE HOUR Instant Pot Gumbo

I’m a Louisiana girl. I grew up in north Louisiana and I lived in south Louisiana for 8 years… and believe me when I say Cajuns know how to cook! 

 

Also, most traditional Cajun recipes are NOT healthy…. 

 

Now, being a Louisiana girl… I have a special place in my heart for gumbo. It’s the perfect meal for a cold fall or winter day!

 

The basis of the dish is the roux (a mix of flour and oil cooked into a peanut buttery consistency). The roux is the HEART of a good gumbo. A lot of my friends in Louisiana didn’t make the roux themselves, but bought a bottle of pre-made roux… but it really can be made at home from scratch!

 

I wanted to try to use healthier ingredients so I made a roux with Olive oil and Rye Flour – Traditional? No. –

Yummy!!! This recipe is SO delicious!

 

I’m a busy mom… and there are just some days that I don’t have time to eat – I know crazy, right!?!

 

Plus, there are just some days I need my chocolate fix and don’t want to ruin my diet. This mama needs some help!!

Enter in my current smoothie addiction!! Haha!

 

Thankfully, this addiction won’t ruin my diet or my blood sugar because it uses my favorite protein powder! I love it because it is only 100 calories per scoop and less than 1 gram of sugar. I love this stuff!

 

You can throw everything into the blender and meal time – or snack time is ready!

When you find a recipe this good and this simple and delicious, you just have to share it! So here it is!

 

Chocolate Covered Almond Smoothie

 

Ingredients:
8 oz. Almond Milk
1 scoop of chocolate protein powder
2 tbs of Almond butter
1 tbs of cocoa
1 tsp of Almond extract
Crushed ice

Instructions:

1. Add ingredients to blender (milk first)
2. Add ice to desired consistency (I love lots of ice)
3. Blend until smooth.
