Ingredients

*1 Large Whole Avocado

*2 Eggs

*Salt and Pepper

*Fresh Herbs (Optional)

*Fresh Lemon (Optional)

Instructions

1. Cut the avocado, remove the seed and open up the inside of the avocado a bit to hold the egg.

I can’t believe our first ever business retreat was this past weekend (and a huge success!!!)

This was totally on our dream board for about a year –

a) to own a house that could host such an event and

b) actually have people come, haha!

My two girls (5 and 3) have reached their picky eating stage, and it makes it so difficult when you want to cook for the family. I wanted to try a recipe that was a healthier version of something I know they will eat: Chicken Tenders!

What I like about these is they are baked and not fried – plus you can even change up the seasoning to fit what your tastes are! I like to add a little onion powder and mustard powder to mine, but I’m sharing just the basic recipe so you can change it up to fit your favorite flavors. I like to take the gluten free option whenever there is one. And you can hardly tell that this banana bread is gluten-free. It’s moist, insanely delicious, and has the same texture and flavor as banana bread made with wheat flour! Sometimes I like to add chocolate chips to the banana bread, like I did today, and it just takes the banana bread to another level. The chocolate chips are completely optional but I use them for the flavor and the health benefits. You could also add in some chopped nuts if you’d like. read more

Summer is finally on its way! We are having a neighborhood cookout today to celebrate the warmer weather and longer days. I wanted to bring something somewhat healthy, because it is so easy to bring something unhealthy to parties and celebrations.

 

This is one of my favorite salads. Broccoli Salad filled with vegetables and satisfying cheese and dressing – yum!

 

This may be a crossover because of the carbs from the raisins, but it is still lower in carbs than most salads (and you could drop the raisins of course!). My mom used to buy this salad at the grocery store, then we learned how to make it ourselves. read more

It is no stretch of the imagination to say that we LOVE Mexican food. I could eat it every week and it would not get old. I craved so much Mexican food while I was pregnant with both of my girls. When I was dealing with Gestational Diabetes, I had to be very careful of not indulging in the rice, beans, and tortillas. These Easy Baked Chicken Fajita Salads became a staple meal for us.

I saw several recipes floating around Pinterest before I decided to make it myself and tweak it into my own recipe. These are quite healthy too. Garlic and Cayenne are wonderful spices for your health and help you detox. read more

I was making snacks for my family and really wanted a graham cracker. I couldn’t find a recipe that fit all my needs. I ended up creating this recipe using ingredients I had on hand. I was really pleased with the cracker recipe. I served it with a cream cheese mint chocolate chip dip.

We try to eat gluten free in our house along with grain free and sugar free. It is pretty hard to find a cracker recipe that fits all of those requirements. I love that this recipe is not only easy to make, but isn’t too messy either. This is a great recipe to have the kids join you in the kitchen to help. read more
