What I like about these is they are baked and not fried – plus you can even change up the seasoning to fit what your tastes are! I like to add a little onion powder and mustard powder to mine, but I’m sharing just the basic recipe so you can change it up to fit your favorite flavors. I like to take the gluten free option whenever there is one. And you can hardly tell that this banana bread is gluten-free. It’s moist, insanely delicious, and has the same texture and flavor as banana bread made with wheat flour! Sometimes I like to add chocolate chips to the banana bread, like I did today, and it just takes the banana bread to another level. The chocolate chips are completely optional but I use them for the flavor and the health benefits. You could also add in some chopped nuts if you’d like. read more

Spaghetti sauces are a fun family meal that everyone enjoys.

This is a flexible recipe too. You can add your favorite vegetables.

This tomato sauce recipe may be an easy way to get your pickiest eaters to try some new foods. By chopping up the vegetables into small pieces and your kids won’t even know they are eating a new food.

I love this meal, because it is basically a one pot dinner.

I usually eat pasta sauces over spaghetti squash. When I can’t find spaghetti squash, I will just buy regular squash and use my food processor to make squash noodles.

Using vegetables instead of pasta keeps this meal low carb. We try to eat lower carb in our house. This is a great way to enjoy your favorite Italian dishes when you are eating lower carb.

Garden Vegetable Spaghetti Sauce Recipe

 

First, I heat up a pan with some coconut oil. Once the pan is hot and the oil is melted, I’ll add my chopped onions, bell peppers, and minced garlic cloves.

I’ll saute those vegetables for a few minutes until my onions start to soften. Next, I’ll add my ground meat and seasonings.

Once the meat is cooked, I’ll add my sliced zucchini and one large can of crushed tomatoes (you can use fresh if you would like).

While this meal is cooking on the stove, I’ll cook my spaghetti squash. You can serve this sauce over your favorite pasta if you would like.

I usually let the sauce simmer for 15-20 minutes to soften the zucchini and also help the flavors really come alive.

Summer is finally on its way! We are having a neighborhood cookout today to celebrate the warmer weather and longer days. I wanted to bring something somewhat healthy, because it is so easy to bring something unhealthy to parties and celebrations.

 

This is one of my favorite salads. Broccoli Salad filled with vegetables and satisfying cheese and dressing – yum!

 

This may be a crossover because of the carbs from the raisins, but it is still lower in carbs than most salads (and you could drop the raisins of course!). My mom used to buy this salad at the grocery store, then we learned how to make it ourselves.

I love how you can customize it to include more or less vegetables that you like. Some people may like to add tomatoes.

 

This is also a great recipe for kids to get involved. My daughter liked mixing the vegetables and helping me chopping as she could. I also love including her in the kitchen as I can to help her learn and be around new foods. I think the bacon was her favorite though, haha.

It is no stretch of the imagination to say that we LOVE Mexican food. I could eat it every week and it would not get old. I craved so much Mexican food while I was pregnant with both of my girls. When I was dealing with Gestational Diabetes, I had to be very careful of not indulging in the rice, beans, and tortillas. These Easy Baked Chicken Fajita Salads became a staple meal for us.

I saw several recipes floating around Pinterest before I decided to make it myself and tweak it into my own recipe. These are quite healthy too. Garlic and Cayenne are wonderful spices for your health and help you detox.

Easy Baked Chicken Fajitas are the perfect meal for throwing in the pan and it being no fuss. I am all about easy and simple recipes that are easy clean up as well. You can have dinner ready in 30 minutes. What more could you want?

You also get a good helping of fresh, tasty vegetables that are full of flavor and vitamins for your family.
