1 Minute Chocolate Muffin in a Mug

Instant Pot Low Carb Hearty Italian Soup  

Oh my goodness. I can’t believe this was low carb 

 

Even better, it took less than an hour to prepare and could be done completely in my Instant Pot!

 

I’m always looking for a quick and easy meal I can throw together in my Instant Pot. This ONE appliance has made it so much easier for me to cook more healthy meals at home – that tastes delicious!

 

You are going to love this! 

 

 

Ingredients

* 2 lb ground beef
* 2 bags of frozen cauliflower florets 

* 1 bag of frozen onion and pepper blend
* 4 slices cooked bacon, chopped
* 1 tablespoon Italian seasoning
* 1⁄2 teaspoon salt
* 1⁄4 teaspoon black pepper
* 1⁄2 teaspoon red pepper flakes
* 2 garlic cloves, minced or 1 tablespoon of minced garlic from jar
* 1.5 quarts of beef broth
* 2 teaspoons arrowroot mixed with enough water to make a paste
* 1 cup heavy whipping cream read more

Today I’m going to share an awesome relish that goes perfectly with the Salmon Cakes (or burgers or grilled chicken… the uses are endless!)

Cucumber Tomato Avocado Relish

This relish is a great compliment because of all the textures and flavors it adds to any dish.

The cucumber adds a nice crunch with a clean fresh flavor.

The tomato adds a mild sweetness.

The avocado adds a smooth, creamy texture to hold it all together.

We have had a lot of fun on Grassfed Mama so far this year. I wanted to highlight some of our top post so far from March.

1) Best Brownie in a Mug

This is always a crowd pleaser. I created this recipe when I was pregnant and dealing with gestational diabetes.  I was needing a snack that I could fix quickly during a nap and that I actually wanted to eat (crazy pregnancy taste buds). I would make this every day (and sometimes twice a day if I needed the extra energy).

When I was pregnant I would use almond butter instead of peanut flour. After I had my baby, I was introduced to peanut flour. I loved how I could make this brownie in a mug with the extra benefit of coconut oil. I get raving reviews from readers how they love it too. We are having a snow filled winter here in Virginia. This Louisiana girl doesn’t know what all this white stuff is that keeps falling from the sky. Thankfully, I don’t have much reason to leave the house when it snows so I get to stay warm and cook for my family.

I love cooking this Low Carb Cheeseburger Vegetable Soup on a snow day when it has all morning to simmer. Soup is the perfect winter meal. 

Soup can be a lunch or dinner during the winter months to warm and satisfy you. Bone broths are so full of nutrients that keep you and your family healthy during the sick months. Broths are also one of the 4 foods that all kids should be eating!  This is one that your kids will want to eat two bowls full of. What kid can resist cheese?

Low Carb Cheeseburger Vegetable Soup

Cheeseburger soup is full of all the cheese and meat that you would expect from a cheeseburger with all the vegetables that you love from a vegetable soup. It is the perfect combination. You can adjust the vegetables that your family loves the most. We found some local squash this past week, so it was just the right vegetable to include in this low carb soup.

I like to add a little glucomannan into my soup to thicken it with no added carbs and staying gluten free. I buy mine off of amazon. You can probably also find it in your local health food store (or use xanthan gum or another thickener if you like).

I love dark chocolate!

I’m talking about that love that you just can’t go a week without… or a day even!

When that craving hits, you don’t want to be reaching for a candy bar.

Commercial chocolate is full of ingredients that are not healthy for you, even though chocolate itself is actually pretty healthy.

Commercial chocolate has processed sugar in it… not good for stable blood sugars or for weight loss.

Dark chocolate is a good source of Magnesium and antioxidants. More on Magnesium here and a magnesium oil recipe. 

Coconut oil is amazing for you! It can speed up your metabolism and help increase weight loss. It can help with brain function.

Lauric acid in coconut oil kills bacteria, fungi and viruses. Plus it taste good too. Get in my belly!

Homemade dark chocolate peanut clusters

So onto the Homemade Dark Chocolate Recipe 

You will need the following:

            

Coconut oil is the base of this chocolate. If it is winter, you can keep your homemade sugar free chocolate solid on your counter. I keep it in my fridge so the chocolate stays solid like a regular chocolate bar.

You can mix everything together easily and pour into molds or into a shallow glass 8×8 sized pan. I like to make mine in silicon molds now, because it is easier to release the candy from than the pans.

I like to melt my coconut oil (or at least have it at a semi-melted state) for easier mixing.

We know that McDonald’s isn’t health food, but we expect to be eating only fried chicken and breading when you order their chicken nuggets.
