1 Minute Chocolate Muffin in a Mug

Chocolate makes everything a little better doesn’t it?

I’m always on the hunt for chocolate snacks that satisfy with my sweet tooth without overloading me on the sugar!

Note: If you didn’t know, I have struggled with Gestational Diabetes with each of my pregnancies, here’s some info on how I beat it naturally!

Given my history and just being honest with myself, if I don’t find sweet things (with chocolate hopefully!) that is satisfying I’m going to end up chowing down on cookies or ice cream. read more

Take off your Eye Make-up Naturally

I love natural beauty tips! I have been keeping coconut oil in my bathroom for quite a while, because I knew it was awesome for my skin!

This is one tip I just recently learned about because I have been using Fractionated Coconut oil!

What is Fractionated Coconut oil??

That just means that it is liquid at room temperature where as regular coconut oil will be at a solid.  This makes it perfect for diluting It Works! Essential Oils to the ideal concentration for your skin without diminishing their natural properties. It also leaves even the driest skin feeling soft, silky, and smooth (which is perfect for this winter!!) Plus, it is colorless and odorless, so you won’t smell like you should be at an island resort (although we all know we would rather be there lol) read more

How to Get Stronger Nails Naturally

I normally had very strong and bright white fingernails… but when I was nursing I noticed that they weren’t as strong or growing like I wanted.

That’s when I started to do some research into what are some natural ways to make our nails healthy and strong.

Foods for Strong Nails

There are many different foods that can help strengthen our nails and many of these fit right in with a healthy diet too!

Gelatin

Adding gelatin to your diet can be an easy way to strengthen your hair and nails. Gelatin is a great source of protein and can help improve your digestion. It is also beneficial for healing inflammation in your digestion tract. You can make fun homemade gummies to increase your gelatin in your diet. read more

Cucumber Tomato Avocado Relish

Salmon Cake Spinach Salad

I’ve shared previously with you my Waffle Iron Salmon Cake recipe using coconut flour like  Bob’s Red Mill Organic Coconut Flour.

Today I’m going to share an awesome relish that goes perfectly with the Salmon Cakes (or burgers or grilled chicken… the uses are endless!)

Cucumber Tomato Avocado Relish

This relish is a great compliment because of all the textures and flavors it adds to any dish.

The cucumber adds a nice crunch with a clean fresh flavor.

The tomato adds a mild sweetness.

The avocado adds a smooth, creamy texture to hold it all together.

I hope you enjoy this relish as much as we do!

The Best Recipes of March

Best Recipes of March!

The Best Recipes of March

We have had a lot of fun on Grassfed Mama so far this year. I wanted to highlight some of our top post so far from March.

1) Best Brownie in a Mug

This is always a crowd pleaser. I created this recipe when I was pregnant and dealing with gestational diabetes.  I was needing a snack that I could fix quickly during a nap and that I actually wanted to eat (crazy pregnancy taste buds). I would make this every day (and sometimes twice a day if I needed the extra energy).

When I was pregnant I would use almond butter instead of peanut flour. After I had my baby, I was introduced to peanut flour. I loved how I could make this brownie in a mug with the extra benefit of coconut oil. I get raving reviews from readers how they love it too. Hope you enjoy my Best Brownie in a Mug.  (Sugar Free and Grain Free!)

2) Low Carb Philly Cheesesteak Casserole {or Salad}

The people have spoken, and they love meat! We love this Low Carb Philly Cheesesteak meal too, because it is so easy to throw together. I love to eat it on a salad with warmer days ahead. How do you like it? Casserole or Salad?

3) Lemon Coconut Cream Cheese Bars {No Bake, Sugar free and Grain free}

These babies are a new favorite! I love how easy they are to make, plus they are full of healthy fats from the coconut oil.  I love that they even have a special ingredient that helps you detox… wonder what it is? Click for the Lemon Coconut Cream Cheese Bars to find out!

Sugar Free Dark Chocolate Peanut Clusters

Homemade sugar free Dark Chocolate Candy can be easy to make at home. I started making my own sugar free candy a few month ago when I realized how much sugar was in even the dark chocolate candy bars. I love chocolate and wanted a way to enjoy it without all the sugar.

Why should you make homemade candy?

1) Cheaper

Good quality sugar free candy is expensive!

2) Quick and easy dessert

Dessert can be ready in less than 20 minutes!

3) Healthy

Using coconut oil and stevia, these candies are actually quite healthy for you… so no guilt if you happen to eat the whole batch in one sitting (not me of course, cough) read more

Low Carb Cheeseburger Vegetable Soup

Low Carb Cheeseburger Vegetable Soup

Low Carb Cheeseburger Vegetable Soup

We are having a snow filled winter here in Virginia. This Louisiana girl doesn’t know what all this white stuff is that keeps falling from the sky. Thankfully, I don’t have much reason to leave the house when it snows so I get to stay warm and cook for my family.

I love cooking this Low Carb Cheeseburger Vegetable Soup on a snow day when it has all morning to simmer. Soup is the perfect winter meal.

Soup can be a lunch or dinner during the winter months to warm and satisfy you. Bone broths are so full of nutrients that keep you and your family healthy during the sick months. Broths are also one of the 4 foods that all kids should be eating!  This is one that your kids will want to eat two bowls full of. What kid can resist cheese?

Low Carb Cheeseburger Vegetable Soup

Cheeseburger soup is full of all the cheese and meat that you would expect from a cheeseburger with all the vegetables that you love from a vegetable soup. It is the perfect combination. You can adjust the vegetables that your family loves the most. We found some local squash this past week, so it was just the right vegetable to include in this low carb soup.

Low Carb Cheeseburger Vegetable Soup

I like to add a little glucomannan into my soup to thicken it with no added carbs and staying gluten free. I buy mine off of amazon. You can probably also find it in your local health food store (or use xanthan gum or another thickener if you like).

I hope you enjoy this Low Carb Cheeseburger Vegetable Soup as much as we do.

What are your favorite vegetables to add into a low carb soup?
