Low Carb Cinnamon Tortilla Chips with Cinnamon Pecan Cream Cheese Dip

You find yourself REALLY wanting a sweet snack but knowing that you REALLY don’t need all the sugar?

 

That’s like my whole life right now! Managing my tendency toward gestational diabetes means that I really can’t deal with sugar or carbs so I’ve been experimenting!

 

Here’s my latest creation!

 

Low Carb Cinnamon Tortilla Chips

4 Low Carb Tortilla (I LOVE this one!)
1 Tablespoon of Butter melted
2-3 Tablespoons of stevia blend
1 Teaspoon of Cinnamon

 

Directions

Brush melted butter on each side of tortillas.

Mix stevia & Cinnamon together.

Cut tortillas into 6 triangles each and dip each side into stevia/Cinnamon blend.

Bake at 350 degrees on baking tray covered in parchment paper for 10 minutes.

 

Cinnamon Pecan Cream Cheese Dip

8 oz of cream cheese softened
1 tablespoon of stevia blend.
1/4 teaspoon on cinnamon.
1 Tablespoon of chopped pecans.

 

Directions

Beat together cream cheese, stevia, and cinnamon until smooth.

Fold in pecans.

 

Note: The stevia blend I use is a cup for cup substitute for sugar (this one is a good choice if you want to try it!). You can use any sweetener you like, just sweeten to taste.

We have had a lot of fun on Grassfed Mama so far this year. I wanted to highlight some of our top post so far from March.

1) Best Brownie in a Mug

This is always a crowd pleaser. I created this recipe when I was pregnant and dealing with gestational diabetes.  I was needing a snack that I could fix quickly during a nap and that I actually wanted to eat (crazy pregnancy taste buds). I would make this every day (and sometimes twice a day if I needed the extra energy).

When I was pregnant I would use almond butter instead of peanut flour. After I had my baby, I was introduced to peanut flour. I loved how I could make this brownie in a mug with the extra benefit of coconut oil. I get raving reviews from readers how they love it too. I love this recipe! This has become a staple in my house. I put this sugar free dip/topping on my One Serving Cookie. I put this one my Peanut Butter Crunch Cake.  I put this on my Chocolate Chip Cookie Oatmeal.  I don’t know what I would do without it.

This is a wonderful fruit dip. I love it with apple slices and bananas.

This week I wanted to feature one of my favorite fruits (yes it is a fruit!)… Avocados! 

We love avocados.

Avocados were actually Aidalyn’s first food. I picked it because it was a good source of healthy fats along with some carbs (very similar to the make-up of breastmilk).
