  2. Hi. I made these muffins with coconut flour and also used sweet blend from trim healthy mama. When I mixed them up the batter looked almost like as if I were making cookies. They are not cooking at all, I keep putting 5 more minutes on the timer hoping they will get done. Not sure if coconut flour was the wrong type of flower. ;-(

    • Okay Coconut flour and almond flour can’t be subbed in this muffin recipe (It would make it a crossover if you are following Trim healthy mama). I used Pamela’s baking mix I think that uses some bean flours.
