This relish is a great compliment because of all the textures and flavors it adds to any dish.

Summer Broccoli Salad

Summer Broccoli Salad

Summer is finally on its way! We are having a neighborhood cookout today to celebrate the warmer weather and longer days. I wanted to bring something somewhat healthy, because it is so easy to bring something unhealthy to parties and celebrations.

This is one of my favorite salads. Broccoli Salad filled with vegetables and satisfying cheese and dressing – yum!

This may be a crossover because of the carbs from the raisins, but it is still lower in carbs than most salads (and you could drop the raisins of course!). My mom used to buy this salad at the grocery store, then we learned how to make it ourselves. read more

Low Carb Comfort Meals

When I was first married, I would spend hours searching for recipes in my cookbooks that my family either bought for me or handed down so I would have endless meal ideas as a newlywed. After my personal health scare, we drastically changed our diets and most of the recipes in those cookbooks no longer fit into our eating plan. I love using some of my older recipes to give me inspiration to update them to make them not only healthier to eat, but low carb too. Enter in Healthy Low Carb Chicken a la King: read more

Found It Fridays #1

Best of the Week

Here on Found it Fridays, I’m going to take the opportunity to highlight and share some recipes or ideas that I have stumbled upon during the past week. I’m open to recipes, crafts, tips, anything goes! If it is something worthy to share, it is worthy of Found it Fridays.

 1) Easy Low Carb Mozzarella Sticks

I love this recipe idea for easy low carb mozzarella sticks. I think that these would be perfect for a movie date at home  or an extra special treat for the kid’s snack. Mozzarella sticks are a childhood favorite of mine too!

2) Low Carb Philly Cheesesteaks Stuffed Bell Peppers

Yum! Wow, I just can’t wait to try these out. I love stuffed bell peppers. Pairing a bell pepper with mushrooms and cheese and steak…. wow!

3) Stacy Makes Cents Scavenger Hunt Date Idea

First off, I love Stacy. I can’t share the love enough. This idea is both so cute and frugal (two things that sum up Stacy in my mind too). If you are looking for a funny blog to follow full of helpful tips, recipes, and saving money tips, hers is the one to hit up. I can’t wait to try out this date night with Adam.

 4) Better than Bread Pudding Crockpot Pumpkin Apple Bread Pudding

{Oh My!, this Southern Girl Can’t contain herself} Sara is a good blogging friend of mine. She is also a southern girl, so she knows that bread pudding runs deep in a southern girl’s cravings. First off this is low sugar and healthy. This recipe is also made in the crockpot! What more could you want in a recipe?

5) Low Carb, Grain-free Heavenly Strawberry Cake from Satisfying Eats

With Valentine’s Day approaching, I was thinking a good strawberry cake would be a good recipe to include. I found this one from Melissa at Satisfying Eats. She gave up grains and her health improved tremendously. We are basically grain free at our house. I love that this recipe is low carb and grain free – – and so pretty too.

Grain Free – Gluten Free Bread

One Serving

This Grain Free Gluten Free Bread is so quick and easy for all the times you want to add a slice of bread to your meal or make an open faced sandwich.

I got the idea from my  Trim Healthy Mama book for making bread in the microwave. I love Trim Healthy Mama. Check out my review here.  You don’t have to use the microwave, you can bake this in the oven too. Sometimes life gets busy and I forget to plan ahead… that’s when I really like having recipes like this that I can make in a hurry.  read more

Iced Chocolate Chip Cookie in 2 Minutes

Grain free – Sugar Free – Gluten Free

Iced One Serving Chocolate Chip Cookie {In 2 Minutes}… Miracles do happen.

I’m so glad I discovered this recipe. I really am in love with coconut flour. It is the perfect flour for making a grain free cookie. I also just started using cocoa nibs in baking. They are a wonderful substitute for filling my desire for chocolate chips. If you like dark chocolate, I think you will love these.

Who doesn’t love chocolate chip cookies? I think everyone gets that craving at night… but you don’t want to make a whole batch of cookies (and be tempted to eat them all – because none of us have ever done that *cough*). read more

Low Fat Low Sugar Oatmeal Apple Cookies

I am really loving having a toddler who loves to cook. We have really enjoyed getting in the kitchen together and experimenting with fun recipes. When she helps cook something, she is also more motivated to try it.

I found this recipe for Apple Breakfast Cookies from Melomeals and they seemed like the perfect afternoon snack for Aidalyn and me to make together. These are full of nutrients and low on sugar, so they are the perfect snack. I also loved that these contain a good amount of fiber. Sometimes toddlers are prone to constipation and this would be an easy treat to give them when they need help getting things moving along. read more

Homemade Dark Chocolate

I love dark chocolate!

I’m talking about that love that you just can’t go a week without… or a day even!

When that craving hits, you don’t want to be reaching for a candy bar.

Commercial chocolate is full of ingredients that are not healthy for you, even though chocolate itself is actually pretty healthy.

Commercial chocolate has processed sugar in it… not good for stable blood sugars or for weight loss.

Dark chocolate is a good source of Magnesium and antioxidants. More on Magnesium here and a magnesium oil recipe.  read more
