Crock Pot Creamy Chicken Mushroom Casserole

 

This is a total comfort food post here… I made this dish trying to recreate a dish I used to make for my husband that used cream of soup yuckiness. I was so excited with how yummy and wonderful this casserole came out using real ingredients to make the sauce. It was so easy to make to, because you use your slow cooker to do all the work.

This Creamy Chicken Mushroom Casserole is fairly low carb. I used Joseph’s pita bread for the topping. If you need to be gluten free, I would use gluten free bread crumbs.

I used my food processor to create bread crumbs using low carb pita breads. My food processor is one kitchen appliance gets a big workout in my kitchen these days.

I know not everyone loves mushrooms. Adam and I love mushrooms. Mushrooms seem to go really well with chicken in creamy sauces. I make a Creamy Tomato Mushroom Cream sauce that is always a hit.

Let’s talk about crock pots. How wonderful are they for busy moms (and wives)? I didn’t start using my crock pot much until I was in grad school and working crazy hours. It was still very much important to me to cook for Adam and myself using whole foods, but we were both tired at the end of the day.

I would prepare my crock pot dish the night before, and keep it in the fridge until the morning. Then before leaving for work, I would just set the crock pot bowl in the machine and turn it to low. When we would get home, the house would smell amazing and dinner was ready! How more awesome can you have it?

Crock Pot Creamy Chicken Mushroom Casserole

This is an easy crockpot, slower cooker meal that you will not believe is low carb!
Prep Time 15 minutes
Cook Time 6 hours
Total Time 6 hours 15 minutes

Servings 6

Ingredients
  

  • 4-6 chicken breasts
  • 1 1/2 cups of shredded mozzarella
  • 1 tsp of garlic powder
  • 1 tsp of salt
  • 1/2 tsp of pepper
  • 1 tablespoon of Italian seasoning
  • 16 oz of sliced mushrooms
  • 8 oz of cream cheese
  • 1/3 cup of almond milk
  • 7 low carb pita breads
  • 1/2 cup of butter melted

Instructions
 

  • Layer in your crock pot the chicken, cheese, and mushrooms.
  • In a small bowl, combine your cream cheese, milk and seasonings.
  • Pour milk mixture over your chicken.
  • In the food processor, place your low carb pita breads and pulse to create bread crumbs.
  • Add your butter to your bread crumbs and stir to combine.
  • Top your chicken and soup mixture with the bread crumbs.
  • Cook in a slow cooker for 4-6 hours on high or 8-10 hours on low

  1. I almost ignored this post when I was scrolling through my Bloglovin’ feed when I saw “creamy” and “mushroom” in the name. I was thinking I don’t need a cream of mushroom soup recipe. I need real food recipes. Then I paid closer attention to what blog the recipe came from and realized wait a minute…this will be something I can use. Pinning for later 🙂 Thanks for providing a site that I know will have good recipes using real ingredients.

  2. I just made this for supper tonight and it was delicious! I do have a question though…are the pita crumbs supposed to be crunchy? It looks like they are in the pic but all I had was a bunch of mush on top of the chicken. It all got mixed in with the sauce and didn’t look very appetizing. I will definitely make this again but just leave off the pita crumbs.

    • Mine did end up crunchy… I think my slow cooker runs a little hot though, so maybe that is why. You could always add the pita crumbs at the very end and pop it in the oven to crisp them on top. Thank you so much for your comment!

  3. Hi Angela! I’m hopping over from Let’s Get Real. You had me at crock pot. I use mine all of the time. My kids keep me running and I rarely have time to cook, but I still want to eat real food. The crock has saved me from processed food. This recipe looks delicious. I’ve used cream cheese for the base of a cream sauce in the crock and it always comes out great. I’m a big fan of anything with mushrooms too. I printed this to add to my meal plan right away.

  8. How much do you think the pita bread makes in volume–a cup? I want to just use the breadcrumbs I have on hand and don’t know how much to use. Thank you!

    • Hi Gina! I think it was probably closer to 3 cups of crumbs maybe – It was more than one cup for me… but you can use less if you want. I liked to mix in all in after it cooked to add a little more body to the sauce, which really made it seem like a true comfort food. thank you for commenting! Next time I will measure out though and let you know exactly what it was cup wise.

  9. I found this recipe on Pinterest and was planning on trying it tonight. I have seen other crock pot recipes that call for the chicken breast to be frozen and cook for 6 hours. So my question is, should these chicken breasts be frozen or thawed first?
