Slow cooker Balsamic Raspberry Chicken

Slow Cooker Balsamic Raspberry Chicken

This Slow Cooker Balsamic Raspberry Chicken recipe is full of French flavors that are delicate yet so flavorful. The raspberries add a mild sweetness to pair with the tangy balsamic vinegar. Together with tender chicken, these flavored were perfect tossed with spaghetti squash.

I’m not sure why this recipe would not get out of my head… it kept nagging at me “make me, make me, make me.” So I thought about the different flavors I was looking for. I really wanted raspberries and chicken together. I love a raspberry vinaigrette dressing on a simple chicken salad. My mind kept going to onions as well. read more

Cucumber Tomato Avocado Relish

I’ve shared previously with you my Waffle Iron Salmon Cake recipe using coconut flour like  Bob’s Red Mill Organic Coconut Flour.

Today I’m going to share an awesome relish that goes perfectly with the Salmon Cakes (or burgers or grilled chicken… the uses are endless!)

Cucumber Tomato Avocado Relish

This relish is a great compliment because of all the textures and flavors it adds to any dish.

The cucumber adds a nice crunch with a clean fresh flavor.

The tomato adds a mild sweetness.

The avocado adds a smooth, creamy texture to hold it all together. read more

Save Money Cooking Whole Chickens

How to Save Money Cooking Whole Chickens

I love shopping at our local Kroger’s. They have a great selection of healthy foods and it makes it so easy to save on groceries and whole foods. This week, I’m going to save so much money because I bought a whole free range organic chicken. I’m going to turn that one chicken into 3 different healthy chicken recipes.  It can be a challenge to save money cooking whole foods, but this is one easy tip!

I get lots of moms who are trying to eat healthier and are struggling to stay on budget every month with their grocery bills. When you can cook from scratch, you can save much more than using boxed meals. Also when you eat whole foods, you will save money because you are healthier and not going to the doctor as much.  read more

Easy Baked Chicken Fajita Salad

 Easy Baked Chicken Fajita Salad

It is no stretch of the imagination to say that we LOVE Mexican food. I could eat it every week and it would not get old. I craved so much Mexican food while I was pregnant with both of my girls. When I was dealing with Gestational Diabetes, I had to be very careful of not indulging in the rice, beans, and tortillas. These Easy Baked Chicken Fajita Salads became a staple meal for us.

I saw several recipes floating around Pinterest before I decided to make it myself and tweak it into my own recipe. These are quite healthy too. Garlic and Cayenne are wonderful spices for your health and help you detox. read more

Healthy Chicken a la King

I had a reader ask for a request recipe makeover: Chicken a la King. I felt up to the challenge to make this dish healthy. So I pulled out my Roshto Family Cookbook and found our family recipe.

Chicken a la King Family recipe

It looked fairly simple overall. I did some digging online and looked at Food Network’s recipe and Allrecipes. Every Chicken a la King recipe I found was different.

The key ingredients seemed to be chicken, mushrooms, onions in a creamy seasoned sauce. Some recipes served with pasta while others served with biscuits. read more

Easy Crockpot Chicken Curry

 Easy Crockpot Chicken Curry

Oh Yummy. I love curry. This is such an easy recipe for a Crockpot Chicken Curry. Adam and I love Indian food. We have a few Indian restaurants around here, but I love being able to have a good curry at home.

Adam bought me a great Indian Cookbook a few years ago that really focused on the main spices in Indian dishes. There are no crockpot recipes in that cookbook, haha. I did learn a lot of the flavors though.

You could additionally top this Easy Crockpot Chicken Curry with some Greek yogurt.

We served it with riced cauliflower because we are trying to eat lower carb meals. You can serve with brown rice if you like. read more

No Roux Chicken Sausage Gumbo

low carb, no roux, gluten free gumbo

No Roux Chicken Sausage Gumbo

Gluten Free, Low Carb

I have mentioned before, that I am a born and raised Louisiana Girl. You can take the girl out of Louisiana, but you can’t take Louisiana out of the girl! In Louisiana, when the weather gets cold (that one night, ha), everyone cooks a huge pot of gumbo to warm themselves. Our gumbo is full of chicken and sausage, and the trinity (onions, bell peppers, and celery).

What makes this gumbo so special is that it doesn’t use a roux to thicken. Rouxs are made from cooking flour in butter and then basically making a very thick soup from that gravy. What I used as my thickening agent is glucomannan. I love glucomannan so much for thickening up my foods. I use it in milkshakes, puddings, whipped cream, cakes, and now my gumbo! I buy it from Amazon. read more

Low Carb Faux-tato Salad

Low Carb Radish “Potato” Salad

I may have mentioned before that I am a Louisiana girl. With all this winter and cold, I had to pull out my huge soup pot to make a pot of gumbo. The way I like to eat gumbo is with potato salad and rice. I needed to transform this very high carby meal into a lower carb one. First I made rice using cauliflower. Next I made my gumbo with no roux making it low carb as well.

I had done some research and found that radishes were pretty low carb and similar in texture to potatoes. I figured I would try to turn my potato salad into a Radish “Faux-tato” Salad. Adam and I both really loved it. Adam was very skeptical at first. I had mad potato salad using red potatoes before, and it looked very similar in color. Adam said that is exceeded his expectations. read more

Chicken Nuggets are such a staple in most kid’s diets (and some adults too!). We love the taste of fried chicken in little tasty bites… But all too frequently American’s feel trapped into getting fast food Chicken Nuggets.

We know that McDonald’s isn’t health food, but we expect to be eating only fried chicken and breading when you order their chicken nuggets.

It can’t be too bad, right?
